Spinach And Chorizo Red Pesto Penne, a healthy pasta dish with spinach is very simple and easy to make, you can substitute Chorizo with Chicken pieces , sausage, etc.

  • 350g (1.5 cups) Cherry Tomatoes, halved
  • A pack of Spinach 
  • 2 tbsp. Extra virgin olive oil 1 Scotch bonnet or chilli flakes (optional)
  • Salt to taste
  • 500g (5 cups) dried Fusilli Pasta or any pasta of your Choice
  • 200g (2 cups) chorizo sausage, chopped into small chunks
  • Red Pesto 


Pesto ingridient 

  • 100g of Pine Nutes
  • 250g of Sun-driend tomatoes with olive oil
  • Fresh Basal
  • 2 x Garlic



  1. Cook Pasta according to the instructions on the packet (usually 10-12 minutes) until the pasta is ‘al dente’ (still slightly firm).
  2. Heat the olive oil in a frying pan and add the garlic, fry for 1 minute.  
  3. Add the halved cherry tomatoes to the pan and cook for 3 minutes.
  4. Add the chorizo and cook for a further 2-3 minutes.
  5. Add the spinach and continue cooking for 2-3 minutes until wilted.
  6. Once pasta is cooked drained, but leave some water in the pasta. Return the pasta to the saucepan along with the water.
  7. Add the red pesto to the cooked pasta and stir through while heating gently.
  8. Add the spinach, tomatoes and chorizo to the pasta and mix well to combine.
  9. Serve immediately.


Pesto Instruction

  • Add all Pesto ingridient in food processor
